About grapes
Hakushu-cho, Hokuto City, Yamanashi Prefecture. The vineyard is located at the foot of Mt. Chigatake, near the border with Nagano Prefecture, at an altitude of 750m above sea level, with a view of the Yatsugatake Mountains in front of it. From early summer to autumn, daytime temperatures rise dramatically, but mornings and evenings are characterised by cool temperatures. Hokuto City is known for its long hours of sunshine, but due to the long rainy season, the summer of 2020 was marked by difficult weather conditions, with short sunshine hours and heavy precipitation. Even so, the grapes were harvested at the perfect time, when the sugar content had risen to a high level, and the diseased grapes were removed one by one, delivering grapes in excellent condition.
◆About the wine
The grapes were harvested at an extended time, so the grapes are very sweet and the aroma of Merlot can be felt in the skins.
We kept the wine in a slightly cooler room to allow the tannins and Merlot fruit to be extracted over a longer period of time.
Many people are a little uncomfortable with the greenness of Merlot, but we remove as much of the stalk, which is the source of such components, by hand every day, and we try to give the whole wine a particularly gentle pigeage once a day.
After a certain amount of fermentation, until the pressing is done, we are particularly vigilant in our observations: even a day's difference can make a big difference to the degree of extraction from the skins we are vinifying, so we do a thorough tasting of the previous day's wine and that day's to decide when to press the wine.
We don't do anything major, but we want to do everything we can to ensure that the true flavour of the grapes is conveyed. We believe that each small difference in such small operations will ultimately affect the taste in a significant way.

Ingredients: 100% Merlot from the City Farm Nirasaki vineyard in Yamanashi Prefecture. Vinification: After destemming and crushing, the wine is fermented for one month and then pressed. The wine is allowed to settle in the bottle for five months before release.
◆ぶどうについて 山梨県北杜市白州町。長野県境にほど近い茅ヶ岳山麓、正面に八ヶ岳を望む畑は標高750mの高地にありま す。初夏から秋にかけて、日中の気温はぐっと上がりますが、朝晩は冷え込むのが特徴的です。

日照時間が長いことで知られる北杜市ですが、長い梅雨の影響もあり、2020年の夏は日照時間が短い、降水 量が多いといった難しい天候が続きました。それでも病気の粒を一つ一つ取り除き、しっかりと糖度が上がった 絶妙のタイミングで収穫、素晴らしい状態のぶどうを届けてくださいました。
◆ワインについて 収穫時期を延ばして収穫していただいているので、ぶどうの状態でも非常に甘く果皮の部分にしっかりとメル ローの香りが感じられます。 ゆっくりゆっくりと発酵を進めて、余すところなく果実の成分を抽出していきたいので少し低温の部屋で管理を し、時間をかけてタンニン分とメルローの果実感を抽出することができました。 メルローの青っぽさが少し苦手という方も多いと思いますが、そのような成分のもととなる梗の部分は毎日でき る限り手で取り除き、一日一回のピジャージュは特に優しく全体を返してあげるようにしています。 発酵がある程度終わってプレスするまでは、特に気を張って観察します。1日違うだけでも醸している果皮から の抽出度合いが大きく変わるので、前日のワインとその日のものをしっかりとテイスティングをして、プレスのタイ ミングを決めていきます。 大きく何かをするわけではないのですが、本来のぶどうの味わいが伝わるようにできる限りのことは尽くしたいと 思う。そんなひとつひとつの小さな作業の違いが、最終的に大きな意味を持って味わいに影響してくると信じて いるからです。
