Yamanashi Prefecture underwent a 19-day fermentation. After 7 months of aging in a 700L amphora, it was bottled. Fermented with wild yeast, without added sugar or acid, unclarified, unfiltered, and with no added preservatives. 60% Cabernet Sauvignon, 40% Merlot.
