Type of wine : dry white biodynamic wine

Grape varieties : 50% Petit Manseng, 50% Gros Manseng

Harvest : manual – first half of October

Vinification : Spontaneous fermentation in barrels. Aged for 9 months on fine lees, in 500-litre oak barrels.

Tasting : Lightly toasted nose, like fresh bread. Then comes a note of candied fruit. Round and fresh mouth.

Food and wine pairing : To be enjoyed with oysters or fish, or even Roquefort, sheep's cheese, or country ham.
